About Isaan Cuisine
The Isaan region of northeastern Thailand has its own distinct culinary tradition, influenced by Lao and Khmer cultures. Signature dishes include som tam (spicy papaya salad), larb (spiced minced meat salad), sticky rice (khao niao), and grilled chicken (gai yang). Food in Isaan tends to be spicier and more sour than central Thai food, using ingredients like padaek (fermented fish sauce) and fresh herbs.

Frequently Asked Questions
What is Lap Keun Roy restaurant in Korat?
Lap Keun Roy (ลาบเกินร้อย — ‘Larb Over 100’) is an Isaan food restaurant in Nakhon Ratchasima specialising in larb (minced meat salad) and other northeastern Thai dishes. The name playfully references receiving more than expected — reflecting generous portions or exceptional taste.
What is larb (laab) in Thai cuisine?
Larb (ลาบ) is a signature Isaan dish — a spiced minced meat salad made with pork, chicken, beef, or duck, mixed with toasted ground rice (khao khua), fresh herbs (mint, spring onion, shallots), lime juice, fish sauce, and plenty of dried chilli. It’s eaten at room temperature and is one of Isaan’s most distinctive dishes.
Is larb always spicy?
Larb can range from mild to very hot — it’s made to order in most restaurants. The spice level is controlled by the amount of dried chilli (prik haeng) and fresh chilli added. You can request ‘pet nit noi’ (a little spicy) or ‘mai pet’ (not spicy). Larb without chilli loses some character but remains delicious.
What other dishes does an Isaan restaurant like Lap Keun Roy serve?
Alongside larb, Isaan restaurants typically serve: nam tok (similar to larb with more blood/offal), som tum (papaya salad), gai yang (grilled chicken), moo ping (pork skewers), sai krok Isaan (fermented sausage), tom saep (spicy Isaan soup), and gaeng om (aromatic herbal broth). All served with khao niao (sticky rice).
